CoCorosco Coconut Oil is 100% extra virgin coconut oil extracted from green coconuts in Southeast Asia, which has a more ‘lemak’ fragrance akin to the luscious aroma of “kueh kueh”.

Ingredients:

  • 100g ripe banana, mashed (about one piece)
  • 14g Cocorosco extra virgin coconut oil
  • 15g milk
  • 12g brown or white sugar
  • 24g plain flour
  • a pinch of salt
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla
  • 10g chocolate chips (optional)

Method:

  1.  Combine banana, Cocorosco coconut oil, milk & sugar in a short, wide mug. Stir thorougly with a fork till well mixed.
  2.  Add flour, salt, baking powder & vanilla.
  3.  Stir till everything is just incorporated. Gently fold in chocolate chips, dotting some on top of the batter. Don’t overmix.
  4.  Cook in microwave for about 1.5 mins – 2 mins, or till centre of the cake feels spongy but moist (not too soft/wet) when lightly pressed with your finger. It’s better to undercook it slightly than to overcook it. Allow to cool for 2 – 3 mins before eating.
